Monte-Solaio's extra virgin olive oil, collected over the past 30 years in the purest Tuscan tradition, is the result of family production. Produced in small quantities, it is sold on local and artisanal markets in Italy and abroad. Favouring quality, Monte-Solaio's extra virgin olive oil comes from 4 different varieties of olive trees (Leccino, Frantoio, Moraiolo, Pendolino). The trees are located on a hill, benefitting from a generous sunshine and swept by the Mediterranean wind all year round.
Grown without chemicals, in accordance with Tuscan olive-growing traditions, the olives are harvested by hand by the family members every year, at the beginning of November. The branches are combed one by one, tree after tree, to the sound of cicadas, as true ambassadors of the region. Cold pressed in the evening in a local mill, unfiltered, without preservatives, the oil is ready for consumption the next day, guaranteeing freshness at all times. The care taken at these different stages guarantees a superior quality to this extra virgin olive oil and gives it an acidity level that does not exceed the European standards required to qualify for the extra virgin designation.
